Carrots – The Elixir of Health

Did you eat carrots today? If you didn’t, go have one right now. Carrots are very good for nutrition and have a good amount of  beta-carotenes. It also helps you lose weight. It has great health benefits and someone has rightly said a carrot a day keeps the doctor away.

Carrots have been said to be a very good weight loss method. It can be used in the place of fat in soups, sauces, casseroles and quick bread. Carrots help to fight fat due to it’s high fiber content particularly calcium pectate; a soluble fiber. Carrots help in lowering of cholesterol in the blood and helps to eliminate bile acids.

Just take half a cup serving of cooked carrots and you are able to get about 4 times the regular daily allowance of  beta-carotene which is Vitamin A, which is very essential for the retina of the eyes to function properly and helps eliminate night blindness. The anti-oxidants present in carrots help to keep the eyes healthy and prevent cataracts.

Beta-carotene present in carrots helps to ward off stomach, cervix, uterus and oral cavity cancers and protects your health by warding off heart diseases due to it’s anti-oxidant effect. Just eat 4 to 5 carrots a day in some form and you can be sure to lessen your chances of getting stroke.

It is always very necessary to have a stock of carrots in your refridgerator. Try to buy good red or deep orange carrots. The color would depend on the variety of the carrot. Choose medium tapering carrots instead of large ones. However large ones would be good if you want to make a dessert out of it. Wash, scrub and remove all soil contaminants. This is mainly because carrot is a root vegetable and chances of pesticide residue being in them. It is good  to peel the outer skin and take out about one quater an inch of the fatter side before consuming it.
