
If you are anything like me then you are the kind of person who needs to have 3 servings of meat everyday. And years ago if you were to place a plate of vegetables before me you would be at a risk of getting beaten up. This was true until I realized that my hemoglobin was close to non-existent.
Vegetables are a rich source of minerals, vitamins and fiber. Increasing your intake of veggies is simple and can be fun as well.
Drink a glass of carrot or beet juice for a fiber boost. Tomato juice is a good option but remember to add a pinch of sugar or Tabasco sauce to it to spice it up. If you cant stomach them in their independent state than dilute them with fruit juices like orange or apple.
Toss as many veggies as you can to your breakfast omelets. Add them to your lunch rice as well to continue the festivities throughout the day.
An excellent snack is a toss of steamed corn with salt, butter, chilly powder and pepper. You can add cheese and mayonnaise as well but watch out for the fat and calories.
Sauté vegetables in olive oil or butter and make a stir fry. You can add your favorite meats to spice up the dish.
Throw in vegetables on baked chicken and fish. They make for a delicious garnish and decorate your dish with colors.
Try tomato and pea soups; they are extremely delicious. Add bread crumbs and other vegetables to your soup to make a healthy meal out of it. Add macaroni or pastas to the soup for a complete meal.
Snack on cucumber, tomato and carrot sticks during the day. They cool your system as well as give you an energy boost. Spice it up with a yogurt dip ( keep it non fat if you are on a diet).
