Nutritional Benefits of Carrots

I ate a carrot everyday when I was a child as my parents told me that I would have no issues with my eyesight if I did so. I take pleasure in thanking them for the good advice they have shared as I can proudly state that I have had no issues with my sight whatsoever.

The beta-carotene in the carrots adds to the orange color of the vegetable. It is this beta carotene that helps to maintain the health of your eye sand perfects your vision. Carrots are also a good source of Vitamin A. This helps to prevent night blindness. But if you think that the health benefits of carrots stop there, then you are mistaken.

Carrots are also high in anti oxidants. Thus it is known to contribute to the prevention of heart diseases, cancer and muscle degeneration. Research clearly states that persons with high amounts of Vitamin A and beta carotene show lower risks of cancer. Amongst the anti oxidants that carrots contain they have one of them called alpha- carotene. The presence of this in your body reduces the risk of lung cancer.

In contrast to other vegetables; cooking the carrots helps to increase their nutritional value. The fiber increases on being cooked and thus they get trapped in your body for longer durations leading to positive benefits of the fiber in your body.

How to eat more carrots?

That’s simple. Carrots are a healthy vegetable that can be consumed raw. Munch on carrot sticks at snack time. You will stay away from junk food by doing so and also increase the amount of fiber in your body naturally.

Add carrots to soup and salad preparations. These help to increase your intake naturally.

Another sure way to get more fiber and beta carotene in your system is to blend them into a juice and add honey and pepper and simple spices to enhance the taste of the juice. Drink a glass daily.
