Creamy, buttery and cheesy southern style grits are a perfect accompaniment to grilled or barbequed meat. Grits can be had at any meal since they are served as a side dish, most times. Southern-style grits are delicious because they have a silken smooth creamy texture.

Many people feel that they are not able to attain the creamy thick texture when they cook grits at home. However, home-made grits can taste creamy and delicious if you cook them the right way. This article gives you the step-by-step method to make grits in the yummy Southern style.

  • To make grits you will need the following ingredients: 1 cup grits (ensure you use regular corn grits and not the instant one), 3 cups water, 1 cup milk, salt to taste, freshly ground black pepper, 2 spoons butter, and 1/4th cup shredded cheddar cheese.
  • To make these grits, take water and milk in a saucepan. Add salt to this mixture and allow it to come to a boil. It is important to add salt at this stage itself so that the grits are well-seasoned. Adding salt at any other stage during the cooking process may result in grits lacking salt. Once the milk-water comes to boil, add butter and stir well. Butter will impart a wonderful flavor to the grits and make them smooth and creamy in texture.
  • Next, add the grits and reduce the flame. Cover the sauce-pan with a lid and allow the grits to cook for 30 minutes. Ensure you keep stirring the grits every 5 minutes so that there are no lumps. Initially, the grits may appear watery but they will thicken in consistency after a few minutes.
  • Stirring the grits is important to give them a great creamy texture. After 30 minutes, the grits will become soft and thick. Remove from stove and add freshly ground black pepper. Mix well and then add the grated cheddar cheese. If required, you can add more butter. Stir well so that cooked grits attain a smooth creamy texture.
  • There are many variations to grits. You can also add cooked bacon bits. For those wanting to add more flavor to grits, add tobasco sauce or any other hot sauce of your choice. A spoon of garlic powder can enhance the flavor of grits.
  • You can also serve cooked grits accompanied by a flavorful mushroom sauce. This will give grits a new flavor profile and turn them into an exotic preparation. To make the mushroom sauce, take 3-4 spoons butter in a pan and sauté 1 chopped onion in it. Add salt and freshly ground black pepper.
  • Next, add 2 cups chopped Portobello mushrooms and sauté till the mushrooms get slightly cooked. Add ½ cup sour-cream or heavy cream and mix all ingredients well. Season with chopped fresh parsley. Add grated cheddar cheese so that you attain a nice creamy mushroom sauce. Serve the creamy mushroom sauce along-side cooked grits.
