  • The first step in making a carrot cake is to grate about 2 large carrots to yield about 3 cups shredded carrot. You could use a food processor to finely shred the carrot to reduce time and effort.
  • In a large mixing bowl combine 2 cups flour with 2 cups sugar, a pinch of cinnamon powder, 1 spoon baking powder, and 1 spoon baking soda. Mix all these ingredients well. Break 4 eggs into this mix and also add 1 cup canola or any other cooking oil. Add the grated carrots to this batter. You could also add a few drops of vanilla essence to give the cake a good flavour and aroma. Try adding a little grated lemon rind to the carrot cake batter. This will give your cake a nice lemony punch which goes very well with the sweet flavour of the carrots.
  • Whisk all the ingredients very well with the help of a hand blender. The batter must get evenly mixed. To bake the cake, pre-heat your oven to 350 degree Fahrenheit. Take a baking tray and rub some butter on it. Now lightly dust the baking tray with flour. This will prevent your cake from sticking to the baking tray when your cake is done.
  • Pour the cake batter into the greased baked tray. Bake the cake in the oven for about 45 minutes at 350 degree Fahrenheit. Serve this cake carrot warm with a cup of tea as a snack.
  • If you are serving this cake as a dessert, you could make a cream cheese or lemon frosting and smother it on the cake. Smoothen the frosting to make it look even. Garnish the carrot cake with shredded carrots and lemon wedges. Cool the cake in the refrigerator till the frosting is well-formed. Cut the cake into medium-sized wedges and serve.
