  • To make pepper chicken you will need the following ingredients: 3-4 skinless boneless chicken breasts, salt to taste, 3-4 spoons freshly ground black pepper, 2 spoons fresh lemon juice, 1 large onion thinly sliced, 2-3 spoons fresh curry leaves, 1 spoon fresh ginger-garlic paste, 2-3 Serrano chilies slit, ½ spoon whole cloves, 1 stick cinnamon, ½ spoon whole cardamom, 1 spoon red chili powder, ½ spoon garam masala powder, and oil.
  • To make this chicken recipe, ready the chicken breasts by washing them under running water. Thereafter, pat them dry and cut them to small cubes or thin strips. Marinate the chicken pieces with salt, freshly ground black pepper, fresh lemon juice, fresh ginger garlic paste, slit Serrano chilies and garam masala powder. Mix all spices very well with the chicken pieces and let it remain marinated for at least 3-4 hours. Marinating the chicken for long will enable all the spices to penetrate the chicken completely. This will make the chicken flavorful and succulent.
  • After this, take the chicken pieces in a pan and cook them till they get completely done. You need not add extra water to cook the chicken. The chicken will get done in its juices and will add to the taste. Cook till all the water evaporates and the chicken becomes dry.
  • The next step is to stir-fry the chicken with herbs and spices. Take oil in a pan and when it gets heated, add the whole spices such as cloves, cardamom and cinnamon stick. Let the whole spices sizzle in the hot oil for a few seconds so that they release their wonderful flavors. Then add the sliced onions and curry leaves.
  • You can also add slit Serrano chilies at this stage too. Sauté till the onions turn light brown in color. Add salt and freshly ground black pepper to the onions and curry leaves and sauté for a few seconds more. Lastly, add the cooked chicken pieces and stir-fry on high-flame for 4-5 minutes. The onions must coat the chicken pieces completely.
  • Once done remove from the stove and serve hot. Garnish this delicious pepper chicken with fried onion rings and fried curry leaves. Add a dash of lemon juice before serving.
