  • Begin making chicken korma by marinating the chicken pieces in salt and fresh lemon juice. This will make the chicken pieces really juicy and tender. You can also use medium-sized chicken pieces with bone in place of boneless chicken. Let the chicken pieces remain marinated for an hour or so.
  • Next, begin making the gravy for the dish. For this take oil in a pan and when it gets heated add the finely chopped onions. Sauté the onions till they turn translucent. Add the fresh ginger-garlic paste and sauté it with the onions for a minute. Next, add salt, red chili powder, coriander powder and a spice blend made by grinding few cloves, cardamoms, cinnamon and pepper-corns. This spice blend is known as garam masala powder and is available at most Asian grocery stores.
  • Then add the tomatoes and add water. You can also use canned tomato puree in place of fresh tomato. After this, add cashew-nut paste and poppy seeds paste. you can substitute cashew-nut paste with almond paste too. This will make the Chicken korma rich and will give a exotic flavor to the curry.
  • At this stage, add water and stir well. Now add the marinated chicken pieces and let the chicken pieces cook completely in the rich gravy. The flavors and spices from the gravy will get absorbed by the chicken making them really delicious.
  • Once the chicken is cooked, remove the dish from stove and add the heavy cream. This will give the dish a rich and smooth texture. You can also add fresh coconut milk to give this dish a wonderful texture and enhance its taste.
  • Garnish chicken korma with finely chopped cilantro leaves and fresh cream before serving. Chicken korma goes best with fresh garlic naan. You can also serve chicken korma with Malabar-style parotta or roti. This dish can also be served with plain rice or rice pilaf.
