Italian cooking has taken the world by storm. The pizza is ubiquitous in its presence but lesser known foods, which are essential home stays, are now coming to the forefront. One of those dishes is lasagna. The dish may seem complicated but if taken step by step it is easy and is a crowd pleaser. Where variety is sought at every meal and you seem spent of all ideas, this is a welcome change for the maker and the consumer.

Difficulty Level

Moderate

Instructions

  • To make lasagna you will require several large basil leaves, 1/3 to ¼ cup extra virgin olive oil, 1 clove of garlic, 1 can (12-16 oz.) can of tomato sauce, salt to season, 1 box (16 oz.) lasagna noodles, 8 oz. mozzarella cheese, 8 oz. parmesan cheese, 8 oz – 12 oz. ricotta cheese. You will need a knife, baking pans, a cheese grater, a colander, a chopping board, measuring spoons, measuring cups, a saucepan, a pasta pot or a stockpot, and wooden spoons and foil.
  • Crush or tear the basil leaves in pieces with your fingers.Halve the clove of garlic.Add the olive oil to the pan.Add the garlic and sauté it for 3-4 minutes without letting it brown too much.
  • Discard the piece of garlic.Add tomato sauce to this garlic infused oil and stir well to amalgamate the oil.Simmer on very low heat.Cover and cook for 30 minutes stirring occasionally.Fill a stockpot with 4-5 quarts of water.Add a fairly large pinch of salt.
  • Bring this to a boil.Add the lasagna noodles into the boiling water.Stir occasionally to ensure the noodles do not stick together.Cook the noodles till they are al dente or able to be cut easily with your teeth.Drain the noodles but do not rinse them.
  • Turn off the heat on the sauce.Grate the cheese.Generously oil a baking pan.Lay some of the cooked lasagna noodles to cover the bottom of the pan.Spread some sauce on the noodles with the help of the wooden spoon.Add the grated cheeses on top.
  • Repeat the process till all the noodles have been used up.Top with the remaining sauce and most of the cheese.Bake in an oven set at 350 degrees Fahrenheit for 20 minutes.Cover with foil for the first 10 minutes to let the cheese melt and uncovered for the next 10 minutes to brown the topmost layer.
  • Stand for 10 minutes before serving.

Tips and warnings

  • Do not stir the noodles with a heavy hand as it may break.
  • Add the tomato sauce gently to the hot oil as it will sputter and spit.
  • Keep most of the cheese for the topping.
